En dag i bageriet

Det här med tidig morgon är förstås ett måste för en bagare. Fördelen är ju att få komma hem tidigare på dagen.
Som tidigast ringer klockan 04.20 och man sprätter upp för en ny härlig dag.

När vi kommer till bageriet så är brödet färdigjäst och ugnen varm. Allt tack vare förinställningar på jäs och ugn. Man bakar brödet färdigt dagen innan och sätter på kyl i jässkåpet. Därefter slås jäsprocessen på under natten enligt förinställningen.
Så då börjar vi baka av. Under tiden tar vi hand om surdegen som också förberetts dagen innan. Den bakas av i vår stenugn.

Konditorn som kommer någon timme senare börjar genast tillverka tårtor och bakelser till dagens försäljning och beställningar. Det görs marsipantårta, Budapest, semlor och annat gott.

När klockan är 7.30 så öppnar vi dörrarna och diskarna har fyllts upp med nybakat bröd, goda bakelser och nygjorda mackor. Sallader och mackor görs under hela dagen. Vi har öppet till 18.00 på vardagarna. Produktionen i bageriet är igång till ca 12.00.

Därefter blir det någon timme på kontoret. I små företag får man jobba med allt från produktion till administration. Svårigheten är alltid att hitta balansen i detta. Man gör så gott man kan såklart. Det som oftast blir lidande är just det administrativa när man har fullt upp att få fram produkter till försäljning. Det är ju ändå det vi lever på!

God planering krävs, och det jobbar vi vidare med.
